One of Chef Liao’s proudest dishes is “Blazing Beef.” It uses prime domestic rib-eye beef, braised with a secret sauce for eight hours in a clay pot. After cooking, the fat is removed, and the meat is cut into 70-gram squares. It is then baked at 120°C for 20 minutes. At the table, high-proof Maotai liquor is ignited in front of the guests, and once the flames subside, the original braising liquid is added.
