A Legend Reinvented! Café de Paris Monte-Carlo Set to Unveil Its New Look!
After 19 months of renovation, the new Café de Paris Monte-Carlo will officially open on Tuesday, November 14, at Place du Casino. The restored café now spans two floors, and its second-floor terrace offers breathtaking views over Place du Casino and the Hôtel de Paris Monte-Carlo. By spring 2024, other boutiques in the building will gradually open, with the Amazonico Monte-Carlo restaurant taking over the rooftop.

Café de Paris Monte-Carlo Reopens on Place du Casino
Since 2014, the Monte-Carlo Société des Bains de Mer Group has been undertaking architectural renovation projects, entrusting Monaco-based architect Alexandre Giraldi, chief architect for historical monuments Alain-Charles Perrot, and architectural heritage director Luc Leroy with the work. The renovations include the refurbishment of the Hôtel de Paris Monte-Carlo, the creation of One Monte-Carlo, new facilities at Casino de Monte-Carlo, the transformation of Jardins des Boulingrins and Place du Casino, among others. The soon-to-reopen Café de Paris Monte-Carlo is the most important part of this renovation project.
The newly restored Café de Paris Monte-Carlo will occupy two floors of the building, with the top floor housing the Amazonico restaurant (an international culinary hub slated to open next spring). At the same time, boutiques for Chopard, Arije, Tag Heuer, and Tiffany & Co. will make their debuts along Allée François Blanc, Avenue des Spélugues, and the Casino gardens.
Reimagining the Café, Delivering a Fresh Visual Experience
The architectural renovation and interior design of Café de Paris Monte-Carlo have been entrusted entirely to David Collins Studio, which has carried out a historic restoration while retaining the original architectural elements. This includes the stained-glass windows, checkered marble, terrazzo mosaics, leather and wood panelling, green, pink and burgundy tones, and the soaring ceilings. Beneath the café’s grand central chandelier, a large zinc counter has been carefully designed as a spot for guests to enjoy cocktails, wines and light bites. The famous ‘banc de l’écailler’ seafood bar will also return, offering a wealth of fresh seafood delights.
On the second floor, the atmosphere is more serene and elegant, with wooden floors and linen-dressed tables creating the perfect setting for a leisurely meal, a dinner with friends, or a business lunch with colleagues. Another highlight is the brand-new 200-square-metre terrace, which overlooks the legendary Place du Casino.
A Menu Returns with Upgrades, Offering a New Culinary Experience
Classic flavours return, bringing the ultimate indulgence. The revived Café de Paris Monte-Carlo will be overseen by a team led by Eric Gorjux, dedicated to crafting a memorable dining experience and bringing back this Monegasque restaurant’s traditional dishes, such as French onion soup, leeks with gribiche sauce, pâté en croûte, and mayonnaise with caviar. Chef Victor Marion says, ‘Café de Paris Monte-Carlo is a French restaurant on Mediterranean soil, and we will carry on its culinary essence. At the same time, we will work closely with local suppliers and introduce more seasonal ingredients to the menu.’
The dining experience has been completely upgraded to bring a variety of flavours to guests. Noël Bajor, who joins as sommelier from the Louis XV - Alain Ducasse restaurant, will work alongside six sommeliers to elevate the professional wine service, allowing wine lovers to embark on a distinctive tasting journey here. In addition, nearly 20 bartenders will serve expertly crafted cocktails across the restaurant’s three bars, offering visitors a thrilling taste experience.
For over a century, Café de Paris Monte-Carlo has stood the test of time. Now it returns to Monaco with a fresh look and Mediterranean flair, presenting a one-of-a-kind dining destination for visitors to the Principality.
