The entire luncheon is held in the shared library and lab of Disfrutar's three superstar chefs: Oriol Castro, Eduard Xatruch, and Mateu Casañas. These three Catalan chefs were formerly the core R&D force at elBulli, making this arguably the premier institute of molecular gastronomy. It must be said that Disfrutar represents the highest level of molecular cuisine today, with the three chefs constantly researching new techniques to deliver novel experiences for diners.
