Baiwei Vegetarian Restaurant occupies an independent ancient mansion,

with ornate carved beams and painted rafters, and walls entwined with rambling rose vines.

Although past the peak blooming season, the roses continue to flower beautifully.

Stepping into the courtyard, a garden design of "a winding path leading to secluded spots, monastic chambers deep amid flowers and trees" unfolds—

every flower, every leaf a whisper of Zen, a truly meditative ambiance.

We ordered the restaurant’s lavish signature Matsutake & Mixed Mushroom Health Hotpot set.

「Cranberry Peach Gum White Fungus Soup」

Served in a beautiful vessel shaped like peach blossom petals,

with red goji berries and soft, silky white fungus.

「Shiitake & Green Vegetable Dumplings」 – these are entirely vegetarian, filled with mushrooms and greens; the shiitake brings a subtle fragrance, the greens freshness, creating a delightfully refreshing taste, a dumpling that honors the original flavors of plant-based ingredients.

Fried dough sticks turn deliciously soft after simmering, soaking up the broth’s umami—be careful, they’re hot!

Lotus root slices are very fresh, this year’s harvest; cooked tender while retaining a crisp, clean note.

Rice noodles are of excellent quality, milky white in color, absorbing the broth beautifully and gliding smoothly on the palate.

The udon has splendid elasticity, slippery and satisfying after cooking.

Good-quality rice cakes, wonderfully springy, savory, soft and tender.

For two people, this all-vegetable health set built around matsutake mushrooms offers great value.

Wild matsutake from Shangri-La, Yunnan, plus porcini and six varieties of mushrooms.

Once the pot boils, you can start by sipping the broth.

At first glance I thought it was ice cream—only when tasting did I realize it was blueberry yam paste.

Bamboo fungus is highly nutritious, served in an exquisite small bowl; there’s also instructions on the table about preparing it.

Vegetarian options also include mock meats like veggie dumplings, veggie ribs, and veggie prawn balls.

The veggie prawn balls have a pleasing bounce once cooked in the simmering matsutake mushroom broth.

The veggie ribs are beautifully presented in two colors.

A generous platter with a rich assortment of fresh vegetables.

Baby cabbage is very fresh; place it in the soup base. If you find the flavor too light,

sliced potato becomes beautifully tender after stewing—an essential vegetarian hotpot ingredient.
